The path to Levain Bakery ran through restaurant kitchens: Pam Weekes and Connie McDonald baked bread for New York City restaurants before opening on West 74th Street. Their 1995 shop used a name derived from the French term for leavened bread.
Each day, the small bakery team formed loaves, rolls, and baguettes by hand. Pam Weekes and Connie McDonald's triathlon training inspired a generous chocolate chip walnut cookie; once a test batch sold rapidly, the cookie became part of the bakery's identity.
Today, The Levain Way expresses that grounding in craft, care, quality, time, celebration, comfort, layered texture, and joy across the bakery's work.

We’ve always been incredibly grateful for the support of the communities we’re a part of, and we strive to reciprocate that support in ways big and small. On opening day, our new bakeries donate all proceeds to a local charity organization, and at the end of every day thereafter, we donate all unsold baked goods. It brings us great pride to think of all the people who’ve been treated to a fresh cookie, a delicious bread roll, or a flavorful muffin in the midst of a challenging day.
